Carne salata


for two people

  • 100 g cut of donkey salt meat
  • 1 goat's tomino from Il Colmetto
  • 2 green cigarette peppers
  • 4 small tomatoes
  • Extra virgin olive oil
  • Salt and pepper





  1. Carefully wash the vegetables. Slice the tomatoes and cut the green peppers into wedges.
  2. Dice the goat's tomino.
  3. Slice the cut of salt meat. Use the knife if you like your slices thick; otherwise use a slicer.
  4. Mix the wedges of green cigarette pepper with the diced cheese, drizzle the extra virgin olive oil on top and season with a pinch of salt and pepper.
  5. Arrange the slices of salt meat on a serving plate, then spoon the pepper and cheese mixture on the side and garnish with the tomatoes.

Tip from Il Colmetto: the tomino can be replaced with one of our more mature and stronger flavoured goat's cheeses, e.g. El Bruno or the goat's Blue.
